      Great thread. This is a gold mine of knowledge and spot-on in almost every post. The only thing I would add is while Lodge cast iron is excellent, I have a Griswold 9 skillet that makes the world's best cornbread. Keep on cooking.

        YYR! I believe that sizzling hot bacon fat in the skillet and in the cornbread produce fine results in any iron skillet.

          and I was figuring about 9" for cornbread....mmmmmm made in bacon fat...double mmmmmmm
